For reference, if during the installation the "I don't have internet" option is not there, press Shift + F10, which will bring up the Command Prompt. In the Command Prompt, type OOBE\BYPASSNRO, then press enter. Make sure it's UPPERCASE, and no spaces. When you press Enter, the system will restart. After restart, it will boot back into setup, and you should see the "I don't have internet" option when it gets to that screen.
