Hey everyone,
I wanted to update this thread, in case anyone else was curious. I ended up getting the Aoostar R1 system a few months ago. It has an N100, 16GB of RAM, 512GB NVME and 2x 3.5" bays that I put some refurbished 12TB drives in. It runs great, and I haven't noticed any issues with Plex on it.
The company came out with a four bay system, but it was always out of stock. They'll have a six bay system come out soon (Q1, they claim) that I might consider if the price is fair.
