My device self-reports as being Model T8 in places like Windows System Information tool and Win32_ComputerSystem WMI class, but on the physical case top and bottom it says W8 Pro.
Which one should I believe when it comes to installing the right bios, drivers, system image, etc.?

T8 is our previous product, W8 is the updated version, they are the same.
